Toad-in-the-hole

Ingredients

  • 8 thick English pork sausages
  • 2 brown onions, sliced
  • 1 tsp brown sugar
  • 1 Tbsp vegetable oil
  • ½ cup plain flour
  • 1 egg
  • 75ml skim milk
  • 1 Tbsp Worcestershire sauce
  • ¼ bunch sage leaves chopped
  • salt and pepper
  • mashed potato and gravy, to serve

Instructions

1 Preheat oven to 220°C. Place the sausages and onions in a 25cm roasting pan and sprinkle with sugar and oil, then bake for 12 minutes.
2 Meanwhile whisk the flour, egg, milk, Worcestershire sauce and sage together, and season lightly with salt and pepper.
3 Remove the tray from the oven and set on the stove over a medium heat. When the oil is very hot and shimmering pour the batter all over the sausages and transfer immediately back to the oven. Bake for 25 minutes. Serve with mashed potato and gravy.
