Simple minestrone

  • 500g pkt dried bean and lentil soup mix
  • 1 stock cube
  • 150g pasta
  • 1 cup cherry tomatoes, halved
  • 2 cups kale, shredded


1 Wash the soup mix well, then combine in a saucepan with 1½ L water and the stock cube. Set over a moderate heat and simmer for 45 minutes, until tender. Add the pasta and cook for 15 more minutes, until the pasta is al dente. Mix in the tomatoes and kale.
