Kir Royale with Finger Lime and Davidson Plum

Ingredients

  • pearls of 1 finger lime
  • 2 sprigs native mint
  • 1 Tbsp caster sugar
  • 1 Tbsp freeze-dried Davidson plum powder
  • ¼ cup limoncello
  • 4 glasses sparkling wine
  • finger lime pearls, to garnish

Instructions

1 Combine the finger lime pearls, mint and sugar in a cocktail glass and pound with a muddling stick. Mix in the Davidson plum powder and limoncello, then set aside for 2 minutes.
2 Strain through a fine sieve into the sparkling wine, then garnish with finger lime pearls
