Yoghurt-topped muesli slice

A healthier alternative to the classic muesli bar…and you’ll even pack it with nutritious veggies. Rock on, mum!

Ingredients
  • 3 cups natural muesli
  • 1 cup wholemeal plain flour
  • 1 cup brown sugar
  • 2 tsp ground cinnamon
  • 3 eggs
  • ¾ cup vegetable oil
  • 1¾ cups grated carrot
  • 100g white chocolate, melted
  • ¼ cup natural yoghurt
  • ¼ cup icing sugar
Instructions

1 Preheat oven to 170°C. Combine the muesli, flour, sugar and cinnamon in a large bowl. Mix the eggs, oil and carrot in a second bowl then add to the muesli and beat until smooth.

2 Spoon into a lined 27cm x 17cm slice pan and press down firmly. Bake for 35 minutes, until golden and firm. Cool on a wire rack.

3 Whisk the chocolate, yoghurt and icing sugar together until smooth and spread over the slice. Refrigerate until set, then cut into pieces.
