Tartlette of christmas pudding, mascarpone and chocolate with summer berries

Serves 4 people

This little recipe is a great way to use Christmas pudding.

  • 4 x sweet pastry tartlette shells
  • ¼ cup Christmas pudding
  • 250g mascarpone
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar
  • ½ pkt chocolate wafer biscuits
  • ½ punnet raspberries
  • ½ punnet blackberries
  • 2 tbsp blackcurrant liqueur

1 Breakup the pudding and fold through the mascarpone with the icing sugar and vanilla.

2 Spoon this mixture into the pastry shells and garnish with shards of chocolate wafers.

3 Mix the berries with the liqueur and spoon around the plate.
