Tartlette of christmas pudding, mascarpone and chocolate with summer berries
This little recipe is a great way to use Christmas pudding.
- 4 x sweet pastry tartlette shells
- ¼ cup Christmas pudding
- 250g mascarpone
- 1 tsp vanilla extract
- 2 tbsp icing sugar
- ½ pkt chocolate wafer biscuits
- ½ punnet raspberries
- ½ punnet blackberries
- 2 tbsp blackcurrant liqueur
1 Breakup the pudding and fold through the mascarpone with the icing sugar and vanilla.
2 Spoon this mixture into the pastry shells and garnish with shards of chocolate wafers.
3 Mix the berries with the liqueur and spoon around the plate.
