Spiced pavlova with kiwifruit

  • 4 egg whites
  • 1 cup caster sugar
  • 2 tsp mixed spice
  • 1 tsp white vinegar
  • ½ Tbsp cornflour
  • 300ml thickened cream
  • ½ cup icing sugar
  • 1 tsp vanilla extract
  • 6 kiwifruit


1 Preheat oven to 130°C. Place the egg whites in a clean mixer bowl and whisk on high speed until soft peaks form. Begin adding the caster sugar a tablespoon at a time until a thick glossy meringue forms. Fold in the spice, vinegar and cornflour.
2 Spoon onto a lined baking tray. Bake for 1 ½ hours then turn the oven off and allow to cool with the door ajar.
3 Whip the cream, icing sugar and vanilla to soft peaks and arrange on top of the pavlovas with slices of kiwifruit.
