Simple apple muffins

Ingredients

  • 300g (2 cups) self-raising flour
  • 1 tsp bicarbonate of soda
  • ½ tsp ground cloves
  • 3 Jazz apples, peeled
  • 150g (¾ cup firmly packed) brown sugar
  • 125ml (½ cup) vegetable oil
  • 2 eggs
  • 185ml (¾ cup) milk

Instructions

1 Preheat oven to 180°C. Sift the flour, bicarbonate of soda and cloves into a large bowl. Coarsely grate 2 apples into a second bowl, then whisk in the sugar, oil, eggs and milk.
2 Pour the apple mixture into the flour mixture and beat well until smooth. Spoon into 12 lined ½ cup muffin moulds. Finely slice the remaining apple and arrange the slices on top. Bake for 25 minutes, until a skewer can be inserted and removed cleanly. Cool on a rack, then serve.
