  • 250g mixed nuts, toasted and chopped
  • 250g dried fruits, chopped
  • 85g plain flour
  • 10g cocoa powder
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • 125g caster sugar
  • 125g honey


1 Toss the nuts, fruit, flour, cocoa and spices in a large bowl.
2 Combine the sugar and honey in a saucepan and set over a medium heat. Cook until a drop of caramel forms a soft ball when dropped into a glass of water (116°C).
3 Immediately pour the caramel onto the fruit and nut mixture then beat quickly to combine. While still hot, press into a slice tray lined with non-stick baking paper, then bake at 160°C for 35-40 minutes, until firm to touch. Cool completely before slicing.
