Milk-thyme damper rolls
While your turkey’s cooking, why not make some fresh, light and truly Aussie damper rolls to serve with it. After all, what could be more Australian – damper, but it’s cooked on a barbecue!?!
- 600g self-raising flour
- 2 tsp baking powder
- 1 tsp fine salt
- ½ bunch thyme, finely chopped
- 400ml milk
1 Preheat a lidded barbecue to medium-high. Combine the flour, baking powder, salt and thyme in a large bowl, then make a well in the centre. Pour in the milk and mix well, until just combined. Do not overwork.
2 Using lightly floured hands, forms into 12 x 80g balls, and place in a greased ½ cup muffin tray. Arrange the tray over a roasting pan half-filled with water and set over the griddle set to high. Cook for 35 minutes, until lightly-golden, then serve with the turkey.
