Gammon steaks with fried potatoes and whiskey

Ingredients

  • 8 medium potatoes
  • 4 Tbsp beef dripping
  • 1 leek, diced
  • salt and pepper
  • 4 x 180g gammon steaks
  • 1 Tbsp vegetable oil
  • ½ gravy
  • ¼ cup Irish whiskey
  • ¼ bunch parsley, chopped finely

Instructions

1 Boil the potatoes then cool under running water. Crush lightly then fry in dripping until crisp. Add the leeks and fry for 1 more minute, then drain and season with salt and pepper.
2 Brush the gammon with vegetable oil and grill on a hot BBQ griddle for 3 minutes each side until caramelised.
3 Bring the gravy and whiskey to a boil, season lightly, and fold in the parsley.
4 Serve the steaks on a bed of fried potatoes drizzled with whiskey sauce.

PROFESSIONAL Tip: Irish whiskey is mild and un-peated, as opposed to the stronger flavoured Scotch whisky.
