The good old fried eggs, I like mine with tomatoes. And maybe a good mustard.
- 1 Tbsp vegetable oil
- 8 eggs
- salt flakes and freshly-milled black pepper
- toast and fried tomatoes, to serve
1 Set a large non-stick frying pan over a moderate heat and pour in the oil. Crack in the eggs four at a time and cook for 4 minutes, until the whites are set but the yolks are just beginning to firm up. For sunny-side over, flip the eggs and cook for 1 more minute. Season with salt and pepper, then serve with toast and fried tomatoes.
