Coconut bread

Everyone loves a banana bread, but a coconut version can be just the ticket to spice things up a little. Plus, this is such a simple recipe that you can’t possibly go wrong.

  • 300ml coconut milk
  • 2 eggs
  • 75ml vegetable oil
  • 2 cups self-raising flour
  • 1 cup caster sugar
  • 2 cups shredded coconut

1 Preheat oven to 180°C. Combine the coconut milk, eggs and oil in a bowl and whisk until smooth. Mix the flour, coconut and sugar in a second bowl.

2 Pour the milk mixture into the flour mixture and beat to combine. Spoon into a lined medium loaf pan and bake for 50-55 minutes, until a skewer can be inserted and removed cleanly. Cool on a wire rack.
