Cheesy beef sliders

Ingredients

  • 1 brown onion, finely sliced
  • salt flakes and freshly-milled black pepper
  • 400g premium beef mince
  • 2 Tbsp tomato paste
  • 1 clove garlic, minced
  • 2 tsp mixed dried herbs
  • 1 Tbsp Worcestershire sauce
  • ¼ cup Parmesan, finely grated
  • 2 Tbsp vegetable oil
  • 8 small soft white buns*, halved
  • 8 slices Gouda cheese
  • ¼ cup tomato relish
  • ¼ cup sliced pickles
  • bagel chips, to serve

Instructions

1 Sprinkle the onions with salt and set in a colander to drain for 5 minutes.
2 Combine the beef mince, tomato paste, garlic, dried herbs, Worcestershire sauce and Parmesan in a large bowl then season with salt and pepper. Mix well, massaging the mixture with hands until soft and sticky. Form into 8 patties.
3 Fry the onions in vegetable oil in a large frying pan over a moderate heat for 3 minutes, until lightly coloured. Form into 8 mounds, then place a meat pattie on top of each. Cook for 2 minutes, until the beef beginning to firm up. Arrange the halved buns on top and continue cooking for 5 minutes, until the patties are firm.
4 Remove the buns, then top each pattie with a slice of cheese and cook until just melted. Arrange the stacks on buns, topped with relish and gherkins. Serve with bagel chips.
