As always, the Hunter Valley Gardens Chocolate Festival 2010 was a smashing success. For the keen cooks who’d like to have a crack at some of my recipes, here they are. Happy cooking.

SHOW 1

Roast pork loin with quince and apple stuffing in dark chocolate and prosciutto, swede, parsley and milk chocolate fritters

Hi-speed chocolate syrup pudding, vanilla yoghurt

SHOW 2

Sesame-crusted kingfish with walnut crudo, cocoa-olive crumbs and rosemary salt, milk chocolate vinaigrette

White chocolate mousse with raspberries and dark chocolate cereal pieces

SHOW 3

Veal baked in clay with single origin coffee and bitter chocolate, poached almond and white chocolate blancmange, baked pears, black sesame seeds

Poached chocolate meringues with gianduja filling, candied cherries and pine nuts

SHOW 4

Rolled lamb loin with chorizo and pistachio stuffing, mixed legumes and mocha bordelaise

Bitter chocolate and smoked almond flan with thrice-cooked strawberries

SHOW 5

Cocoa-scented smoked beef with lentils, soft-poached egg and tangelo

Milk chocolate layer cake with lime marmalade and cream
